Mom's Cheesy Bubble & Squeak Casserole
Mum and my family moved to Australia when she was around 10 years old I believe, so I have been shown a lot of English type recipes and now being in the States, I share these with a lot of my friends here they have never heard of half the stuff I make"

Ingredients- the recipe has 2 parts. A roux/cheese sauce, and the leftovers.
6. In a large casserole dish, add all your macaroni and leftovers and then pour the cheese sauce all over, and use a spoon to mix it all together.
7. Add any seasonings you want, such as cajun spice, salt and pepper, herbs etc. Mix it all in.
8. Cover the top with some breadcrumbs and sprinkle the rest of the grated cheese.
9. Bake at 200C, Gas 6, 400 F for 20 - 30 minutes, until the top is golden. The time will vary depending on how big or small you make your casserole.
I like spicy so mine had Cajun sausage and lots of hot Cajun seasonings added to it. It had a kick!
